FATS AND OILS : OTHER OILS

Safflower, the worst of all oils, is hot, pungent after digestion, heavy, irritant and provokes all the doshas. Mustard oil is not held in high regard by the texts either, though North Indians swear by it.
Other oils have qualities according to the foods they are derived from, as do animal marrow and fats. Oil, animal body fat, bone morrow and ghee are in order increasingly better for pitta and decreasingly useful for vata and kapha.
