While Carum Carvi, the true caraway, grows wild in the northern Himalayas, and other species of Carum are found in India, it is caraway's cousin C. copticum, known as ajowan, which is mainly used in Ayurveda. Ajowan and caraway have similar properties, being pungent an better, hot, and pungent in post-digestive effect. They control vata and kapha and tend to increase pitta. Ajowan is used mainly for the digestive tract, especially as a decoction for gas and colic, and the seeds are chewed to improve the digestive fire.
